Nobody wants juice that was once a bright color, but now is brown or gray. What you can do in order to maintain the bright color is to add around two fresh teaspoons of lemon juice. The flavor won’t be affected by this tiny bit of lemon juice, but the color of the fruit or vegetable juice will be preserved.
